Spinach and tomato soup


Ingredients

Spinach- 250 gms

Tomatoes- 250 gms

Onion- 1 medium size

Chicken/vegetable stock- 500 ml

Pepper powder- to taste

Salt- to taste

Grated Cheese for garnish- 20-30 gms

Method

Wash and cut spinach and tomatoes roughly. Put all the spinach and tomatoes in a pressure cooker along with one onion cut in slices.
Add salt if needed since stock should have salt.



Add 500 ml of chicken or vegetable stock, and cook it for a short while. About 3 minutes after the first whistle of the pressure cooker goes off.
Open cooker, cool slightly and blend with a hand blender. Strain the whole mixture after blending it..



Add pepper powder as per taste.
Serve hot with a little grated cheese on top.




Note: This is a really simple recipe and it’s very easy to make. It’s great to have this soup during monsoon and cold winter days.
