Chicken and Shitake Mushroom Soup

Serves : 2-3 persons


Ingredients

Chicken- 1 chicken breast

Dried Shitake Mushrooms- 7-9

Spinach- 100 gms

Spring Onions-2-3 sprigs

Chicken stock- 700 ml

Butter- 20-25 gms

Light Soya Sauce- 1 tbsp

Pepper powder- As per taste

Salt- As per taste


Method

Soak dried Shitake Mushrooms in water. Add a pinch of salt in the warm water. Keep for 10 minutes

Cut the white portion of the Spring Onions and slice the white part and the green part of the spring onion. Keep it separate.

Slice the chicken breast into thin slices. Marinate with a pinch of salt and pepper, cover and keep aside for ten minutes.

Remove the mushrooms from the warm water. Squeeze then and then slice it into thin slices. Throw away the stem and use only the top portion.

Put a pan on the stove on medium heat. Add the butter and let is melt.

Then add the white portion of the spring onions and sauté it for one minute.

Add Chicken slices and sauté for 3-4 minutes.

Then add the slices Shitake Mushrooms and continue sautéing it for another 3 minutes.

Then pour in the chicken stock and increase the heat till the soup comes to a boil.

Reduce heat and add light soya sauce.

Throw in the washed spinach. Don’t cut it. Let it cook for another 30 seconds.

Check the seasoning as the stock will contain salt. If required add salt.

Add pepper powder as per your taste.

Switch off the heat.

Now garnish with the green part of the spring onions and serve hot.

 


Note: If you don’t have chicken stock,  use chicken cubes to make the stock. You can even use vegetable stock.

Chicken stock is easy to make. I will give the chicken stock recipe in another post so check it if you want to make chicken stock at home. It is super easy to make.

You can substitute button mushrooms instead of Shitake mushrooms in which case you don't need to soak them. Just slice and use them directly.
